3 Easy, No-Cook Appetizer Recipes You’ll Love All Summer
FoodSummer is sizzling, but your frying pan doesn’t have to be. Today, we’re bringing you three recipes for cold starter dishes that are super easy to make. All you have to do is whip out your ingredients and put them all together, no oven or stove required.
1. White Bean and Artichoke Toast
When it feels like avocado toast is blowing up everywhere, we have an even better alternative. It incorporates artichokes, beans, and all the makings of an appetizers that feels gourmet.
Ingredients:
- Canned/jarred artichokes, drained, rinsed and patted dry
- Sourdough bread slices, toasted in butter
- Can of Cannellini beans
- Olive oil
- Lemon juice
- Salt and pepper
- Chopped parsley
Directions:
Rinse, drain and pat dry artichokes. Then do the same with your Cannellini beans. Mash beans in a bowl using a fork. You can leave them chunky if you prefer. Rough chop the artichokes. Mix beans, artichokes, olive oil, lemon juice, salt, pepper and chopped parsley. Toast bread in a skillet with butter, and spread the artichoke mixture on it.
2. Green Goddess Caprese Salad
Next, say buongiorno to a spin on an Italian classic, the Green Goddess Caprese Salad. It’s a refreshing, all-around good-for-you option for this summer.
Ingredients:
- Sliced mozzarella cheese
- Sliced cucumber
- Sliced tomato
- Spinach leaves
- Olive oil
- Green goddess dressing
- Sea salt
Directions:
Layer cucumber, cheese, tomato and spinach leaf repeatedly around the plate. Drizzle a little bit of olive oil around food. Drizzle Green Goddess dressing around the plate, and add salt and pepper to taste.
3. Sriracha Shrimp Rolls
Finally, we bring you a cold summer staple with a hot little kick. That’s right, here’s how to make some scrumptious Sriracha Shrimp Rolls that will leave your guests or family speechless.
Ingredients:
- Regular-sized potato hot dog buns
- 1 lb of boiled shrimp
- Regular mayonnaise
- Siracha
- Lemon juice
- Chopped chives
- Salt and pepper
Directions:
Cut your hot dog buns in half, and prepare to toast in butter in a saucepan. In a bowl, combine mayo, sriracha, lemon juice, chives and salt and pepper to taste. Rough chop the deveined, cooked and peeled shrimp. Mix into the dressing. Serve into half buns and sprinkle with salt and pepper.
