Cooking with CBD Oil: 3 Recipes You Can Make on 4/20 & Every Day

CBD Oil – yes, it’s derived from hemp, but no, it won’t get you high! It’s legal in many states, and some studies have suggested it can relieve certain kinds of pain and anxiety.  Nutritionist Teresa Hansen is giving us ways to work it into healthy recipes.

1. Sparkling CBD Green Juice

CBD is made from cannabis, but you will not get high. Some nutritionists recommend 25 milligrams of CBD a day. Here’s a delicious sparkling green juice that can be a great option in the mornings.

Instructions 

12 ounces coconut water

½ whole lemon (1 tsp zest, 2 tbsp lemon juice)

2 cups leafy greens such as spinach or kale

10 mg CBD oil

4 ounces sparkling water

Directions 

Add coconut water, lemon and leafy greens to a blender and blend until smooth. Strain through a fine mesh strainer or pour straight into glass with ice. Stir in CBD oil and top with sparkling water.

2. CBD Kale Chips

Here’s a great option for a snack to accompany maybe a potential night of Netflix binging, or something filling in between meals.

Ingredients 

1 bunch organic Lacinato kale (about 1 pound)

2 tsp minced garlic

Zest of 1 lemon

Juice of ½ lemon (about 2 tbsp)

3 tbsp olive oil

1/8 tsp sea salt

40 mc CBD oil

2 tbsp hemp seeds

Freshly-cracked black pepper

Directions 

Cut and tear kale into one-inch pieces, discarding any large stems. Add to large bowl and set aside. Mix together garlic, lemon zest, juice, olive oil, sea salt, CBD oil and hemp seeds in a small bowl.

Pour mixture over kale and toss to combine. Evenly spread kale chips on dehydrator trays and dehydrate at 125F for four hours. If baking, spread kale chips evenly on baking sheet and bake at 200F for one hour and 40 minutes, rotating pan after the first hour. Store in loosely covered bowl at room temperature.

Chef’s notes: Lacinato kale, also known as Tuscan or black kale, was tested for this recipe. Substitute green curly kale if necessary.

3. CBD-infused Honey Parfait

This recipe uses a different form of CBD. Instead of oil, Chef Hansen is using an isolate powder that she’ll infuse into some fat to create a delicious parfait.

Ingredients 

2 tsp honey

10 mg CBD oil

1 cup full fat Greek yogurt (2%)

Pinch of cinnamon

1 cup fresh berries (blueberries, strawberries, raspberries)

2 tsp chia seeds

Directions 

Mix honey and CBD oil together in a small bowl until combined. Add Greek yogurt to bowl and drizzle with CBD honey, cinnamon fresh berries + chia seeds. Eat immediately.
